Kinsip House of Fine Spirits

Kinsip House of Fine Spirits is an estate distillery dedicated to the
innovative and rigorous crafting of creative spirits. We are a family
business — Maria and Michael both operate the distillery and make
their home here. Maria leads the retail experience at the farm and
her partner Michael guides the distilling operations. The family has
young children and extended family who love exploring and working
together at the farm. Maria’s family has been crafting spirits in
Bulgaria for generations — now introducing the next generation to
distilling in Canada. Kinsip is made possible by the hard work and
dedication of the talented artisans and hosts who work together
with us to create an extraordinary experience for our guests.

Through experimentation and rigorous craft, Kinsip
brings new flavours and flare to well-known drinks. We
are inspired by both the global traditions of distilling
and our bountiful local produce. Kinsip advocates the
grain-to-glass model of craft distilling where grains
are both fermented and distilled on-site. As an estate
distillery, we take our commitment to expressing our
farm’s terroir a step further by also growing and milling
grains for our spirits here. We use small-batch processes
with special attention to the unique expressions in each
batch and barrel to determine how they could contribute
to our desired spirit profile. From firing our own barrels to
foraging for botanicals, we are dedicated to the craft of
creating distinctive spirits that are excellent to sip or mix,
helping bring families and friends together to celebrate
life’s moments both small and grand.

Kinsip incorporates a heritage farm with 80 acres of
sweeping fields at 66 Gilead Road outside Bloomfield
in beautiful Prince Edward County. Established in 1865,
during the booming Barley Days of the County, the farm
originally grew hops and barley. Visitors to the distillery
can see the barns built specifically to dry hops, now
aging fine spirits. A distillery was added in 2012, including
a custom 1200 litre Kothe copper hybrid still with two
adjustable 9-plate rectifying columns. Tastings are
hosted in the summer outside with our funky chickens
and peacocks, on rainy days in the cooperage, and in the
winter in the sipping room in the grand Cooper-Norton
house, built in the Second Empire style.
